This is a simple potato salad that is perfect for summer entertaining and events.
Ingredients
- 3 lbs white potatoes, peeled, washed, and cut into 1 inch pieces
- 3/4-1 cup mayonnaise
- 1/4 cup (or less) yellow mustard
- 3-4 tablespoons apple cider vinegar
- 1/4 cup chives
- Salt and pepper to taste
- Boil the peeled, washed, and cut potatoes for about 20 minutes, drain and let cool.
- Mix the mayonnaise, mustard, salt, and pepper in a large bowl. Cover and place in the fridge until the potatoes are cooled.
- Combine the potatoes with the mayonnaise mixture. Add the chives and mix well. Place in the refrigerator to cool for 2 hours to over night or eat immediately.
